Filipino Inspired  Honey Mint Mango Ice Cream


4 cups vanilla ice cream

½ cup organic honey

½ cup fresh mint leaves

1 cup chopped mango


1. Begin by lining a baking sheet with wax paper. Pour the honey onto the sheet and freeze. You will need at least an hour for the honey to harden.

2. Remove the baking sheet with the honey from the freezer. Use a scraper to scrape off thin rolls of frozen honey into a bowl. If you don’t have a scraper, you can use a flat knife or simply use your hands to form the honey into small pieces.

3. Place one scoop of vanilla ice cream into a mason jar. Top with mango and honey and then place another scoop of vanilla ice cream on top. Top with even more mango.

4. Generously sprinkle your shavings of honey on top. Now garnish with fresh mint. For a stronger mint flavor, chop the mint into small pieces. Serve as a treat on a hot day, or as the finale to a savory meal.
