1 loaf of french bread
2 cups chopped strawberries
½ cup fresh basil leaves
2 cups crumbled goat cheese
2 tbsp balsamic vinaigrette
1. Preheat your oven to 425°.
2. Slice the loaf of french bread into slices about ½ in thick. Place in a single layer of an ungreased baking sheet and bake for 5 minutes until toasted. If you have a toaster oven, use it for this step. Remove from heat and set aside.
3. Chop 2 cups of strawberries until they are thinly diced. Lay out the bread and top with a spoon full of goat cheese. If you don’t like goat cheese, try substituting bleu cheese or cream cheese. Either are delicious. Now top with a spoonful of strawberries.
4. Garnish with a leaf of fresh basil. Drizzle the balsamic vinaigrette over the bruschetta. Serve as an appetizer or with brunch.
