Mustard Seed Sauteed Green Beans

1 lb string beans

2 tbsp cooking oil

1 tbsp chopped onion

½ tsp garlic

2 tbsp mustard seeds

½ tsp salt

½ tsp black pepper

1. Heat the cooking oil in a frying pan or wok over medium heat.

2. Wash and remove the ends from the string beans, being sure to remove any bad spots. You can leave them whole or chop in half.

3. When the oil is hot, add the onion and fresh garlic to the pan and saute until golden brown. Add the mustard seeds and cook until they pop (about 2 minutes). Now add the green beans to the mixture. Cook for 8 to 10 minutes stir frying constantly, or until the green beans are firm, but tender. Remove from the heat and toss with a pinch of salt and pepper. Serve warm or at room temperature.
